Shepherd’s Pie – All-in-One Dish

I am crazy for all-in-one recipes. They make for easy assembly, minimal dishes, and most of them are absolutely delicious! I have come across many different recipes for Shepherd’s Pie, and I’ve tried several, but then created my own that combined the best of those I have tried. I hope you enjoy!

Shepherd’s Pie

Prep time: 20 minutes
Cook time: 40 minutes
Total time: 1 hour
Serves: 4-6


Ingredients:

  • 1 lb ground beef
  • 1 yellow onion, chopped
  • Seasoned salt & pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp lemon pepper
  • 15 oz canned cream style corn
  • 4 cups mashed potatoes (homemade or instant!)
  • 1 cup shredded colby jack cheese

Directions:

  1. *If using instant mashed potatoes, make the potatoes according to package instructions.
  2. Brown the ground beef, with the chopped onion, seasoned salt & pepper, garlic powder, and lemon pepper, over medium-high heat in a large pan. 
  3. In the bottom of an 8×8 casserole dish, place the hamburger mixture.
  4. For the next layer, pour over the cream style corn.
  5. Then, add the mashed potatoes and flatten into a smooth layer with a spatula.
  6. Place the casserole dish on a baking sheet (sometimes it can bubble over).
  7. Cover with tinfoil and bake at 350 degrees for about 35 minutes. 
  8. Take out of the oven and sprinkle over shredded cheese. Let sit for 10 minutes for the cheese to melt and the mixture to thicken a bit.
  9. Enjoy!



This really is a hearty meal. I discovered it over the winter, but I have already added it to my harvest “meals on wheels” lineup for fall. I will probably double the recipe when I make it then since I have a larger crew to feed!

Now, some of you may detest that I use instant mashed potatoes. But hey, sometimes it is about convenience and getting supper on the table quickly. I have made this recipe with both instant and homemade, and it turns out yummy no matter what! When I prepare my weekly meal plans, sometimes I like to make homemade mashed potatoes early in the week and then use the leftovers in this recipe later in the week.
