Traditional Beef Roast with Potatoes and Carrots

I have a three-for-one recipe to share tonight! 

Sometimes nothing beats a traditional beef roast in the crockpot. I grew up eating beef roast with potatoes and carrots, so it is a nostalgic comfort dish that I have loved to put my own touch on as the cook in my home now.

Beef Roast

Prep time: 15 minutes
Cook time: 8 hours (in the crockpot!)
Total time: 8.5 hours
Serves: 6-8

Ingredients:

  • 5 lb beef roast
  • 2-3 cups beef broth
  • ¼ cup Montreal Steak Seasoning

Directions:

  1. Place beef roast in the bottom of your crockpot. 
  2. Pour over beef broth. 
  3. Shake steak seasoning on top of roast.
  4. Cook on low for 8 hours.
  5. When done, take out of the crockpot and transfer to a baking dish. Shred with two forks. 
  6. Then, pour over about a cup of beef broth from the crockpot and mix together. This helps keep the beef moist. 
  7. Enjoy!

For the beef roast, I’ve used several different cuts and they all seem to turn out delicious. Arm roast, rump roast, chuck roast, etc. They all become so tender after cooking in the crockpot all day – which is another thing I love about this recipe! I throw it in the crockpot before I leave for work in the morning and when I get home all I have to do is shred it up and boom! Supper is on the table. 

This beef roast serves as the base for so many other recipes I make, especially during harvest when I feed a full crew of hungry guys. I use the shredded beef in beef commercials, hot drip beef sandwiches, or I serve it with homemade mac and cheese for a different twist! 

Now, to add a modern touch to this traditional recipe, instead of cooking the potatoes and carrots in the crockpot like I grew up eating, I have recently been making them in the air fryer! I throw them in while I shred the beef and then everything is ready to go. For some reason, Jacob prefers the carrots and potatoes separate from the beef too. 😉

Air Fryer Carrots

Prep time: 5 minutes
Cook time: 15 minutes
Total time: 20 minutes
Serves: 3

Ingredients:

  • 16 oz bag baby carrots
  • 1-2 Tbsp olive oil
  • 2 tsp Mrs. Dash

Directions:

  1. Place carrots in a medium bowl.
  2. Drizzle over olive oil.
  3. Shake over seasoning and stir to coat carrots.
  4. Air fry at 390 degrees for about 15 minutes – take out and shake once halfway through the cooking process.
  5. Enjoy!

Air Fryer Potatoes

Prep time: 5 minutes
Cook time: 20 minutes
Total time: 25 minutes
Serves: 3

Ingredients:

  • 1.5 lb bag baby potatoes
  • 2-3 Tbsp olive oil
  • 1 tsp dried rosemary
  • Pepper and seasoned salt, to taste

Directions:

  1. Place potatoes in a medium bowl.
  2. Drizzle over olive oil.
  3. Shake over seasonings, adjust to your liking. Stir to coat potatoes.
  4. Air fry at 400 degrees for about 20 minutes – take out and shake once halfway through the cooking process.
  5. Enjoy!

I know I’ve been hitting it kind of heavy with recipes lately, but we don’t have too much going on around the farm this time of year (waiting for the next round of calving to begin) and with the cold weather, all I have wanted to do is stay inside and cook or bake! Otherwise, the guys have been hauling corn and working on the tractor and planter.
