Sweet Apple Pork Chops

Sharing my favorite recipe for making pork chops in the winter – and it’s an original recipe of mine!

My husband, Jacob, and I absolutely love to grill when the weather is warm. We probably make at least 4-5 meals a week on the grill during the summer, and one of our favorite meats to grill is pork chops! During the winter however, grilling is not as easy. It can be done, but who really wants to stand outside in the cold and snow making supper? Not me! So I’m always looking for new ways to cook meat during the colder months.

One night a couple months ago, I had some extra time in the evening after work and I already had a package of homegrown pork chops (yep, Jacob raised the pig! 😉 ) thawed out in the fridge. I thought I would play around with some staple ingredients I always have in my pantry and see what I could come up with. Thus, my Sweet Apple Pork Chop recipe was created!

Sweet Apple Pork Chops

Serves: 2

Prep Time: 15 minutes
Cook Time: 30 minutes
Total Time: 45 minutes

Ingredients

  • 6 Tbsp butter
  • 2 Tbsp olive oil
  • 1 white or yellow onion, diced
  • 1 Honeycrisp apple, diced
  • 3-4 red potatoes, diced
  • 1 ½ tsp cinnamon
  • 2 tsp thyme
  • 2 tsp rosemary
  • Salt & pepper, to your liking
  • 2 pork chops (bone-in or boneless)

Directions

  1. Melt 4 Tbsp of butter in a large skillet and add olive oil. Sauté onion, apple, and potatoes over medium heat until just starting to soften (about 10-12 minutes). During this time, preheat the oven to 350.
  2. Add cinnamon, thyme, rosemary, salt, and pepper to the skillet. Stir together to coat sautéed mixture. Transfer to a 9×13 baking dish.
  3. Add remaining 2 Tbsp of butter to the skillet.
  4. Season pork chops with salt and pepper, and sear in the skillet. About a minute per side.
  5. Place the pork chops on top of the potato mixture and pour over the juices from the skillet (this helps keep the pork super moist!)
  6. Bake for about 12-15 minutes, or until the internal temperature of the pork reaches 145 degrees.
  7. Enjoy!
